Barbecue Sauce

Barbecue Sauce


INGREDIENTS: 2 tablespoons oil, 1 onion chopped, 1 tablespoon tomato puree, 2 tablespoons wine vinegar, 2 tablespoons soft brown sugar, 1 heaped teaspoon mustard powder, 2 tablespoons Worcestershire sauce, 150 ml. water.

METHOD: Pour the oil into a saucepan, add the onions and fry for 3-4 minutes until the onions are translucent. Stir in the tomato puree and then add the rest of the ingredients. Bring the mixture to the boil and simmer for 10-15 minutes.

Hot tip: It's important to stir in the tomato puree separately in order to get a smooth barbecue sauce.

Chicken Tikka



Chicken Tikka

INGREDIENTS: 1 cup fresh yoghurt (should not be sour), 1 cup finely chopped fresh coriander leaves, 2 tbsp ginger paste, 3 tbsp garlic paste, 3-4 tbsp garam masala, 6 peppercorns/ 2 dry red chillies, 3 tbsp lime/ lemon juice, 1/2 tsp orange food coloring (optional), 1 kg chicken (breast or thigh) skinless and cut into 2" chunks, 1 large onion cut into very thin rings, lime/ lemon wedges to garnish, 1 tsp chaat masala.

METHOD: Grind the chopped coriander (keep some aside for garnishing) and all other marinade ingredients (except yoghurt) to a smooth paste in a food processor. Pour the above mix into a large bowl and add yoghurt. Mix well. Add the chicken pieces and mix well. Cover the bowl and refrigerate. Allow to marinate overnight. Thread the chicken onto skewers and keep ready. Preheat your oven or grill to a medium high temperature (200 degree Celcius/400 degree F). Place the skewers on the grill racks in your oven with a tray underneath to catch drippings. Roast open till the chicken is browned on all sides and tender. Remove from skewers and put the chicken in a plate. Put the onion rings in a separate bowl and squeeze lime juice over them. Now sprinkle chaat masala over them and mix well so the onions are fully coated. Garnish the chicken tikka with these onion rings and serve.

  • Cut a square of it to get a better grip on bottle and jar lids.
  • Place them under furniture legs to prevent it from scratching your floor.
  • Use them for emergency placements. It is inexpensive, so opt for a number of different colours and styles in order to brighten things up.
  • Put them on top of your washer or dryer to place things on them.
  • When stacking dishes/ china, place these liners in between the plates to prevent them from chipping.

Hot Aromatherapy Oil Tips



  • If the plant material used is very strong, such as a strongly scented rose, or jasmine, you should get a good scent just changing the plant material once or twice.
  • When the oils are done to your liking, strain thoroughly and put in a clean bottle. Keep your aromatic oil in a cool place, or add to recipes for lotions and creams.
  • To make a wrinkle fighting night cream, add the contents of six Vitamin e oil capsules and whip them in as well.
  • You can use any strongly scented flower petals, and the range is as wide as the scented flowers in your garden. Try jasmine, fragipani, honeysuckle, marigold, violets- the choice is endless.
  • For culinary use, put some sprigs of herbs, such rosemary, thyme or basil, into a tall bottle, and pour over good quality cooking oil such as safflower or olive.
  • You can also add garlic, chillies or whatever seasoning takes your fancy. Leave where the sun can warm the bottles for a coupe of weeks.
